Green Chili Chicken and Lime Soup


I love this soup at Chili's. It is so light and delicious. I get it sometimes at lunch. I found the recipe for it and I am excited to make it. I am not a big cilantro fan, but can handle a hint of it in this soup. All the flavors mixed together make my mouth water. The pieces of avocado are my favorite . It is easy on the waistline too...a real winner (Or as my hubs says at random times, "winner winner chicken dinner!" I have no clue what it means but it sounds fitting for this dish).


2 Tablespoons extra virgin olive oil
1 onion, chopped
4 cloves fresh or roasted garlic, minced 80 oz chicken broth, 2 1/2 cartons of the 32 oz
10 oz can rotel tomatoes, mild
7 oz can diced green chilies
4 medium boneless skinless chicken breasts; cooked, shredded and lightly seasoned with salt and pepper
2 1/2 Cups cooked rice of choice
1/4 Cup fresh lime juice
1 1/2 teaspoons ground cumin
Pinches of Kosher salt, fresh cracked black pepper and Lawry’s Garlic Salt with Parsley to taste
1 bunch of fresh cilantro, chopped
Fresh diced avocados, drizzled with lime juice
1 Cup shredded cheddar cheese
Tortilla chips


1. Place oil into a large dutch oven over medium heat. Saute onion for 5 minutes then add in garlic; cook for 1 minute. Stir in chicken broth, tomatoes, green chilies, chicken breast, rice, lime juice and seasonings. Cook for 5 minutes; taste and season according to your liking. Right before serving add chopped cilantro.

2. Serve soup with fresh diced avocado, shredded cheese and crushed chips if desired. Makes 10-12 servings.

I have been craving this Strawberry Pretzel Salad. I just love it! I have noticed it highlighted on other blogs lately. I guess it is that time of year when everyone is craving rich, strawberry goodness! I think I will make it next week with the strawberries I put in the freezer. Yum!

Both recipes sound really good...but I have that same condition your mother and sister have... a case of the 'dont want to'...so why don't you come make

8 years ago today I met this sweet man in the picture above. We met on a blind date in the Bluff City (aka- Memfrica). All Aboard The Birthday Polar Express

  Can you believe Henry Patton will be 4 years old tomorrow?! Neither can we. We celebrated his birthday last weekend with his first all boy party, polar express style. I had so much fun preparing for it, as you can probably tell! My mother who is never at a loss for words said it looked like Polar Express threw up in my house. She was SO right and we loved it! We had a breakfast pajama party with 7 three and four year old boys. It was such a fun time.   I had his pajamas monogrammed with a train and his name. He loved them and I liked how they sort of looked like the ones on the movie. Henry loved all the bells I had everywhere. There is no doubt we believe at this house. We had the jingle loud and proud!   I had his invitation made from a shop on Etsy and I was very pleased with them. One of his little friends came to the door ready for me to punch his ticket.
