Food Friday

This week I introduced some new dishes to our home. I am excited to share them with you. Randall now says, "Let me guess, this is going on Food Friday?" and he knows to not touch the dishes until I take a picture. I am training him well, I tell ya!

Hobo Supper
It has a funny name. We have had fun with the name. If you know us well, you can imagine. I have always seen this recipe in books but never tried it. I decided to make it and I loved it! It was so easy and yummy. There is no real science to it. You can make as many as you want. I made 4 so we could have it for 2 meals.
Ground turkey or beef patties
red potatoes cut up
carrots cut up
onion cut up
salt & pepper
Put 1 patty and handfuls of each veggie in a foil packet. Fold each up and place on cookie sheet. Bake at 350 until done. It took me about an hour.
Dump Chicken
The name is odd and the dish is just as odd. We probably won't recreate this at our house, but you may want to try it. You might really like it. I had no idea what to pair it with. We are all about having complimentary sides at our house and we could not decide what to eat with this dish. I am still at a loss. Maybe you can try and it and let me know what you think. It has a sweet and spicy flavor but not a real Mexican flavor like you might think. Odd.
chicken pieces
1 taco seasoning packet
8 ounces salsa
8 ounces apricot preserves
Cook on low in crock pot until juices run clear (about 5-6 hours)
Apple Butter
Yum! Randall has recently declared he loves apple butter. I decided to make him some. I found it in a Weight Watchers cookbook and it is a crock pot recipe. We ate it on biscuits the night we had the hobo supper. It was the best meal! Randall spread Land O Lakes Butter (ha! hint, hint) on his biscuit and then spread this all over it. He loved it. I shared some with my running friend, Sara this morning. I hope she enjoyed it as much as we have.

10 baking apples - peeled and cut up
1.5 C brown sugar
1/2 C apple juice
1t. ground allspice
1t. ground nutmeg
1t. ground cloves

Mix all together and cook on low for 6-8 hours or until apples are very tender. Mash apples with a potato masher. Cook uncovered for 1 to 2 hours, sirring occasionally, until mixture is very thick. Cover and store for up to 3 weeks.


Food Friday is not Food Friday with the little foodie.
He enjoys sitting in his little portable chair attached to the kitchen counter while I cook. He thinks he is big time. He is a little mess!

Henry had his first fortune cookie this past week when we had Chinese with Lindsey. Lindsey and I have had a Cho Cho Chicken bond since our early 20's. We introduced Henry to that love and he was smitten. He did not eat Cho Cho or the cookie, but Lindsey made sure he got his fortune. It said "You will have good luck when you get back home". We laughed. He enjoyed Gerber apples and blueberries and proceeded to wear most of it, as you can see. We had a nice time with the foodie at the Chinese eatery in Searcy. The waiter was smitten with him and tried to take him out of the high chair to hold him. It was most odd but good times.

All Aboard The Birthday Polar Express

  Can you believe Henry Patton will be 4 years old tomorrow?! Neither can we. We celebrated his birthday last weekend with his first all boy party, polar express style. I had so much fun preparing for it, as you can probably tell! My mother who is never at a loss for words said it looked like Polar Express threw up in my house. She was SO right and we loved it! We had a breakfast pajama party with 7 three and four year old boys. It was such a fun time.   I had his pajamas monogrammed with a train and his name.
