Food Friday

Here is a little peek at some "do over" dinners at my house of late....

I got a great buy on pork tenderloin last week and stocked the freezer with a few. My pal, Sara makes them all the time and has told me how her boys love it and how easy they are to cook. She simply puts it in foil with a few spices and cooks it according to the package directions. I did just that and it was a winner at my house too! We had yeast rolls, smashed potatoes and sweet and sour green beans. It was a do over dinner for sure, for sure!



This week I made potato salad for the very first time and it was stellar! I hate to brag on myself, but it was just that good...I was impressed. I am not a big mayo fan so making anything like tuna salad, ranch dressing, etc is a real chore for me. I like potato salad if the mayo taste is hidden. I attempted the basic recipe from the red & white check cookbook and it was a success. I used red potatoes and lots of spices. Randall is not a big tater salad fan but he liked mine quite a bit. We had it with bbq chicken and homemade baked beans (I rarely eat canned baked beans b/c making them is so easy and they taste so much better to me). This was also a do over dinner at our house!


The do over dinners of all do over dinners at my house is the "bird sauce". Mercy, I can't keep that feeder full! Those birds sure like my "sauce". I have it attached to my kitchen window and there is usually a bird there every time I look. It is a chore to keep replenishing it, but such a neat thing to watch. I love it!


My little foodie was eating his fruit loops (the do over breakfast of choice) in the kitchen floor when he found his Daddy's wallet and said "score!" when he found the gold card! That's my boy!

I'm a terrible "lurker" on your blog :) I LOVE reading your food posts and rarely comment on them. However, I am always looking for new recipes and wondered if you would send me your for sweet & sour greenbeans. We love green beans, but I don't have very many ways to fix them.

  Can you believe Henry Patton will be 4 years old tomorrow?! Neither can we. We celebrated his birthday last weekend with his first all boy party, polar express style. Meet Shaun

This is my single co-worker and church friend, Shaun. He and I have so much fun bantering back and forth. He takes what I dish out and scoops it right back up and hands it back to me. He's home!

I know you didn't know my dear husband was out of town. I decided not to post such information. I get scared enough as it is, I sure didn't want to advertise the information. Yes, you read correctly, I get scared. Before we had children, and well, even after Samuel was born, I would stay with a friend of mine when Stephen was gone overnight. When we moved from that town I didn't have anyone to stay with, so I would just sit up and watch tv all night. Fear kept me awake. Isn't that silly?
