Food Friday

I love an oyster. I wish this tray of goodness was in front of me instead of this keyboard! Last weekend Randall intended to take me to eat them, but we ended up in the play area of McDonald's eating chicken. The things we do to please our children and get the wiggles out after a long car ride. It was a memory, that is for sure! Randall WILL be taking me back over the flooded Mighty Mississippi to eat them again really soon... and Henry will be visiting his Grandaddy or his favorite M'Town cousins while Mama gets her eat on!



King Ranch Chicken is so yummy. Mama made this alot when we were growing up and it was always a favorite in our family. I made this for our neighbors this week. It was tough taking it out of the house all warm and ready without eating any of it! For those of you who don't have a recipe for this yummy dish, here it is:




1 cooked chicken - deboned and diced


1 can Rotel


1 can cream of mushroom soup


1 can gumbo soup


tortilla chips


shredded cheese




Mix soups and Rotel together. Layer chips, chicken, soup and cheese in a greased 13x9 pan until full. Top with lots of cheese. Cook at 375 degrees until bubbly. I serve french bread and salad with this dish. It should serve 6.




It is not Food Friday without my little foodie. He loves the idea of drinking water out of a cup. It is always a wet and fun mess. He had just taken a drink in this picture...oh, how I love that wet face!

All Aboard The Birthday Polar Express

  Can you believe Henry Patton will be 4 years old tomorrow?! Neither can we. We celebrated his birthday last weekend with his first all boy party, polar express style. Meet Shaun

This is my single co-worker and church friend, Shaun. He and I have so much fun bantering back and forth. He takes what I dish out and scoops it right back up and hands it back to me. He is a keeper for that and many other reasons, which I will share on this post. He's home!

I know you didn't know my dear husband was out of town. I decided not to post such information. I get scared enough as it is, I sure didn't want to advertise the information. Yes, you read correctly, I get scared. Before we had children, and well, even after Samuel was born, I would stay with a friend of mine when Stephen was gone overnight. When we moved from that town I didn't have anyone to stay with, so I would just sit up and watch tv all night. Fear kept me awake. Isn't that silly? Well, it didn't seem so at the time, but when I look back on it now it seems silly. That is until I have to be without a manly-man in the house.
