Ritz Mock Apple Pie
I made this for the first time. I am sure I have eaten it before, but I don't recall it. I kept running into the recipe, so I tried it. It was interesting and worth a try, yet I don't think it was any easier than making a real apple pie. Cheaper, yes, but easier, no. 2- 9 inch pie crusts
1 sleeve of Ritz crackers - crushed
2 cups sugar
2 tsp cream of tartar
1.75 cups of water
1 grated lemon peel
2 tbsp lemon juice
2 tbsp butter
1/2 tsp cinnamon
Preheat oven to 450 degrees. Roll out 1 pastry sheet and place in pie pan. place cracker crumbs on top. Mix sugar and cream of tartar in saucepan. Gradually stir in the water. Bring to a boil on high heat. Reduce heat and simmer for 15 minutes. Add lemon peel and juice. Cool. Pour syrup over crackers. Dot with butter and sprinkle with cinnamon. place the other crust on top. Trim, seal and flute edges. Place slits in the center of the crust. Bake 30 to 35 minutes. Let cool.
Tasting Parties
I love this idea. Very clever, cute and fun. My friend Sara has introduced this concept to her little boys. It is so cute to hear her tell of all the fun things she serves in random glasses (shot glasses, sherbet glasses, wine glasses), small bowls of all shapes and sizes, and trendy pieces she has collected for hosting tasting parties. Her sweet boys are eating Greek yogurt every afternoon and have no idea! I love it.The ideas are endless. I am excited to think up a reason to throw a tasting party! I love the display of it all, and the portion control that comes with this concept. Pier One has lots of neat pieces and ideas. if you are interested in learning more, look it up or go to a local store to get a brochure that tells you all about it. Pretty neat!
And the little foodie is cruising through the produce aisle! This was his first time in this little contraption and he was an instant fan. I loved watching him and so did everyone else in the store. he waved all through the aisles like he was in his own personal parade. I love this child's personality!
